Making Oil Olive

Process 1
The olives are picked by hand and once they are immediately transferred to the factory.
Process 2
Inside the mill the first step is to classify the fruit received. This order is usually made based on the following points:
- Variety
- The degree of maturation.
- The health status.
Once sorted, the olives undergo a process of cleaning, washing, weighing and storage until the time for milling arrives.
Process 3
Once carefully sorted, the olives undergo a process of cleaning, washing, weighing, and taken without delay to the oil mill for processing.
The grinding allows to break the structure of the olive to release the liquid part, almost a third of the pulp of the olive is oil.
Process 4
The grinding allows to break the olive and release the liquids, almost a third of the pulp is oil. The dough is beaten for at least an hour during a temperature of between 24 and 27 degrees.
This is done with the aim that the oil is separated from the rest of the fruit (pulp, seed, skin, fluids). The most crucial part of the process is making sure that the temperature does not increase to obtain the best cold press.
Process 5
This process deals with the separation of the liquid part from the solid part. Here begins one of the vital phases that will determine the final quality of the product. Once the paste is obtained, the liquid part must be separated from the solid part.
This process is carried out by means of a selective filtration (an extraction of the oil that remains in the upper part of the paste is carried out) and the extraction by pressure in hydraulic presses distributes the paste over the stacked filtering caps or filtering discs.
Then it is subjected to pressure generated by the presses and from which the oil and olive pomace are obtained. The oil obtained from the first pressing is of higher quality.
Process 6: Decant the oil
The decantation consists of separating the olive oil from the water and the solids, the solids are strained to make freshly squeezed juice.
This natural process allows different densities to slowly move, causing the oil to separate and rise to the top.
Process 7: Oil packaging
The oil is packaged.
The oil container cannot be made from any materials other than PET and glass.
